Jaffles or Toasted Sandwiches

Ingredients

2-4 slices whole grain or gluten-free bread

Filling (Baked Beans; Mushroom Sauce; Cooked Mushrooms; scrambled eggs; Hummus; Tofu and Salmon Spread; Pineapple and Ginger Spread; Apricot Jelly; tomatoes onions, garlic,;or various combinations of these)

Directions

Heat jaffle iron and brush lightly with cold-pressed virgin olive oil.

Place whole grain or gluten-free bread slices in jaffle iron and fill with one of suggested fillings.

Close jaffle iron and cook for 4–6 minutes.
